882. Curaçao Flan

Ingredients:

3 cups of sugar

4 cups of milk + 1 can (400 g) of sweet condensed milk

12 eggs, slightly beaten (yolks and whites well-mixed)

Pinch of salt

2 teaspoons vanilla
Caramelize 1 cup sugar over low flame until golden brown and cover bottom and sides of mold with it. Mix milk and remaining sugar and scald. Let cool for a minute. Add slightly beaten eggs. Add salt and vanilla. Strain. Pour into caramelized mold.

Place mold in a shallow pan of water and bake at 350 F for approx. 1.5 hours (or use a double broiler on a stove over medium heat). Cool completely in the pan, then refrigerate for a few hours or overnight. Invert on deep platter.
