Sprinkle or drizzle pika on your steak, chicken or fish, funchi, french fries and fried prawns (krupuk) No criollo meal is complete without pika di sibojo (pickled onions)!
Ingredients for 2 cups of pika:
1 large red onion, thinly chopped (yields 1 1/2 cups)
1 Scotch bonnet pepper, Caribbean red peppers (a variation of the chilly pepper) thinly chopped (keep tiny pits for a spicier kick)
1 1/2 cup distilled white vinegar
4 teaspoons of salt
Mix onions, pepper, vinegar, and salt in a large sealed container and really give the mixture a good shake. Pickle your pika for a few days, then enjoy! This Pika will last you a few months.
